1 c. raisins, cooked in 1 c. water, cool
1 c. prunes, cut up, cook in 1 c. water, cool
1 c. applesauce, sweet or unsweetened
2 eggs
1/4 c. Sweet-N-Low
3/4 c. corn oil
2 c. self-rising flour
1 tsp. vanilla
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. soda
1 c. chopped pecans or black walnuts
Dredge nuts and raisins in flour. Beat egg and applesauce. Combine all ingredients and bake at 350 degrees for 35-40 minutes in shallow pan.
1 c pinto beans, dried
5 c water
2 T lard
1 T bacon drippings

1 lb beef, coarse grind

1 cinnamon stick, ground
1 t black pepper, freshly ground

1 nutmeg, ground, whole
1 t cumin
2 t oregano, dried, pref. Mexican
4 T sesame seeds
1 c almonds, blanched, skins removed
12 red chiles, whole dried or 1 1/2 c chile caribe
1 1/2 oz milk chocolate, small pieces
1 cn tomato paste (6 oz)
2 T vinegar
3 t lemon juice
soft tortilla,chopped

Place the rinsed beans in a bowl, add 2 to 3 cups of water and soak overnight. Check the beans occasionally and add water as necessary to keep them moist.
